Stephanie Manning ran track at Southern Arkansas from 1992-1996. In her time at SAU, Manning would be a three-time All-AIC recipient while also helping guide the Lady Mulerider track and field program to four consecutive AIC Championships starting in 1992.

As a competitor, Manning would capture five AIC Championships as she won the individual 100-meter dash (12.74) in 1992 and was a part of the 400-meter relay team for SAU that won the AIC Championship in 1992 (48.57), 1993 (50.07), and 1995 (48.33). Manning was also the opening leg of the 1600-meter relay team (4:27.99) in 1993 that won the AIC Championship.
In her freshman year of 1992, Manning would earn All-America honors, a feat she would match as a junior in 1995 as she was a member of a 400-meter relay team that would finish fourth overall (47.48) at the NAIA National Championship meet.
To date, Manning is still a part of two record relay teams as the 400-meter relay record (46.88 -1992) and the 800-meter relay record (1:42.96 - 1992) remain intact.
